I don't have a kitchen. I don't have a home. I'm a gypsy.&lt;br /&gt;&lt;br /&gt;I am also only feeding me and occasionally my husband and brother in law who is graciously sharing his home with us for a while.&lt;br /&gt;&lt;br /&gt;I make bacon and eggs and nachos most often.&lt;br /&gt;&lt;br /&gt;I have made some interesting experimental things.&lt;br /&gt;&lt;br /&gt;Yesterday I found two roasts from Angel Foods in the deep freezer.&lt;br /&gt;I did what any frugal woman with Dutch roots would do.&lt;br /&gt;&lt;br /&gt;Found brother in law's crock pot...threw in both roasts frozen...poured a can of Hunts Spaghetti Sauce with Mushrooms on top...cooked on high.&lt;br /&gt;Made some pasta and veggies and dinner was made.&lt;br /&gt;&lt;br /&gt;When we first got here I had an eighteen pound turkey that needed to be cooked.&lt;br /&gt;&lt;br /&gt;I decided to just roast it a la Thanksgiving.&lt;br /&gt;Let's just say - different kitchen, different oven, different baking pans and utensils, spices and herbs of undetermined age...&lt;br /&gt;good thing the smoke alarms were waiting for new batteries&lt;br /&gt;&lt;br /&gt;I have discovered that I love butter.&lt;br /&gt;Did you know that you can fry raw oatmeal in butter and just a pinch of sugar and you get a single sized cookie? You can then throw some chocolate chips on top and yummy.&lt;br /&gt;&lt;br /&gt;Also don't assume you know what is in a kitchen just because on the surface it looks well stocked with Pampered Chef tools and stones and etc...&lt;br /&gt;As I was making Pasties for Father's Day I discovered ...oh no...no rolling pin.&lt;br /&gt;Also the only flour what whole wheat.&lt;br /&gt;&lt;br /&gt;Did I mention I have no transportation other than my feet?&lt;br /&gt;&lt;br /&gt;I have been finding interesting ways to use the 24 whole wheat short pastry dough balls that were supposed to be individual pasties. Hmmm I will let you use your imagination...&lt;br /&gt;&lt;br /&gt;Well I'll be off to Houston for 5 weeks. Maybe I will check in from there...that is if I'm allowed in my daughter's kitchen. She is quite the cook.&lt;br /&gt;&lt;br /&gt;I told you I'm a gypsy. I don't know what I will return to other than it won't be brother in law's house. Good thing I don't need to worry.&lt;br /&gt;&amp;nbsp;&lt;sup class="versenum" id="en-NKJV-23304"&gt;25&lt;/sup&gt; “Therefore I say to  you, do not worry about your life, what you will eat or what you will  drink; nor about your body, what you will put on. Is not life more than  food and the body more than clothing? &lt;sup class="versenum" id="en-NKJV-23305"&gt;26&lt;/sup&gt;  Look at the birds of the air, for they neither sow nor reap nor gather  into barns; yet your heavenly Father feeds them. So I sliced the whole lot of them.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;Problem is by then I was getting hungry.&lt;/div&gt;&lt;div style="text-align: center;"&gt;Dinner is tough when it's just for one.&lt;/div&gt;&lt;div style="text-align: center;"&gt;What to do? Pour into hot skillet.&lt;br /&gt;&lt;br /&gt;It needed cheese but all I had was some string cheese. No problem. I tried a new recipe for dinner and the family loved it.&lt;br /&gt;Now that there are only 3 left at home we have enough leftovers for another whole meal!&lt;br /&gt;Now it's your turn to try it.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;3 lbs Chicken, boiled and shredded&lt;br /&gt;6 oz. bow-tie pasta, cooked and drained&lt;br /&gt;4 whole ribs celery, leaves included, thinly sliced&lt;br /&gt;3/4 c. Craisins&lt;br /&gt;3/4 c. slivered Almonds&lt;br /&gt;1/2 c. Mayonnaise&lt;br /&gt;1/2 c. Sour Cream&lt;br /&gt;1 c. Heavy Cream&lt;br /&gt;3 - 4 T. Curry Powder, to taste&lt;br /&gt;1 T. sugar, to taste&lt;br /&gt;1 t. Actually it was pretty good considering the busy week my family planned without telling me everything.&lt;br /&gt;&lt;br /&gt;So what shall we plan for this week.&lt;br /&gt;&lt;br /&gt;Today is easy. No one except me is home. So - leftover Flame Broiler beef and rice sound good.&lt;br /&gt;&lt;h2&gt;&lt;span style="font-size:100%;"&gt;Spinach, Tomato and Feta Scramble&lt;/span&gt;&lt;/h2&gt;&lt;p&gt;2 Tbsp Coconut Oil&lt;br /&gt;1 packed cup of chopped spinach&lt;br /&gt;8-10 free-range eggs&lt;br /&gt;1/2 cup chopped sun-dried tomatoes or 1 medium tomato, diced&lt;br /&gt;1/2 tsp. sea salt&lt;br /&gt;1/2 tsp. garlic powder (could use 2-4 minced garlic cloves)&lt;br /&gt;1/2 tsp. onion powder (could use 1/2 sm. onion, diced)&lt;br /&gt;1 cup shredded cheese (mild Cheddar, Monterrey Jack, Colby, etc.)&lt;br /&gt;1/4 cup crumbled Feta cheese&lt;/p&gt; &lt;p&gt;1) Melt coconut oil in a large frying pan or skillet at medium heat.  Add chopped spinach, and cook until just wilted.&lt;/p&gt; &lt;p&gt;2) Whisk eggs together (add a bit of water or milk for extra  fluffiness, if you like). Pour into pan, and begin to scramble with  spinach. Add the sun-dried tomatoes or diced tomatoes.&lt;/p&gt; &lt;p&gt;3) Sprinkle salt, onion and garlic powder and mix in well while  continuing to cook.&lt;/p&gt; &lt;p&gt;4) Once eggs are just cooked, sprinkle in shredded cheese and feta  cheese. Keep cooking until melted. She has worked for an entire year practicing, planning and practicing. She was expected to plan the music, who she would have to fill out the recital, where it would be held, invitations, programs, thank you's, and a reception.&lt;br /&gt;&lt;br /&gt;Who says you have to have cookies or brownies or cake at a reception? Bea needs to eat gluten free and is also lactose intolerant. She planned a gluten free, dairy free reception. Everyone enjoyed the food and it was simple.&lt;br /&gt;&lt;br /&gt;She had fruit and veggies. Honeydew melon, watermelon, grapes, sliced pink lady apples, carrots, celery and grape tomatoes. You don't want it to be even slightly rancid. I used white wine vinegar because I only use white vinegar for cleaning purposes not eating. Since I discovered Pink Himalayan Salt about 6 months ago that is all I use for cooking. It is saltier than table salt so use a little less than what is in the recipe. It is a complete salt with the minerals nature provided so I think it is a healthier salt than the purified sodium chloride in table salt. I always use fresh ground pepper for fresh food like a salad. Use whatever red pepper sauce you have on hand. Today I used Garlic Tabasco. Don't leave out the pepper sauce. California. I used Haas because that is what I had but a smooth skin avocado would have a firmer texture for this recipe. It is easy to cube or slice an avocado. Cut in half, remove stone, slice or cube with table knife, then turn inside out and the avocado usually falls out. I prefer the thick sliced bacon at the butcher block to the pre-packaged bacon. It is usually sale priced once a month so if you watch for the sales it is a better price and higher meatier bacon. Any kind of onion would work in this salad. I had regular brown onion on hand so that is what I used. I am currently struggling with some reactions to food. I still don't know what exactly my body is not liking but I have cut most dairy products and am trying to not eat wheat/gluten.&lt;br /&gt;&lt;br /&gt;I will say I really really like my food raw. I seem to actually crave raw foods.&lt;br /&gt;&lt;br /&gt;Whole fruit and vegetables are easy.&lt;br /&gt;Nuts and seeds are easy.&lt;br /&gt;&lt;br /&gt;My favorite right now is Two Moms in the Raw. I particularly enjoy the Goji Berry granola bar.&lt;br /&gt;&lt;br /&gt;Eggs - not so much raw...but I like soft boiled and runny yolks.&lt;br /&gt;Meat - I do tend to like my beef extremely rare. When I was visiting Guam I really loved the raw meat dish Kelaguen. I need to learn what substitutions to use here. Guam has it's own citrus that is similar to lime but much more tart and it's own wild hot pepper.&lt;br /&gt;&lt;br /&gt;I loved the Thai Fresh Spring Rolls I had in WA but have not found a good Thai restaurant locally yet. Any suggestions are welcome.&lt;br /&gt;&lt;br /&gt;My goal is to eat 70% or more raw. I really feel better and have less hives and rashes. I suppose I should mention that I tend to be pickier buying food that I intend to eat raw. I just have to tell you about these brownies.&lt;br /&gt;They are Betty Crocker's Gluten Free Brownie Mix. Can you believe it, a mix?&lt;br /&gt;They were so good. No wonder they were rated the number one brownie mix in a blind test. The tasters were very surprised to find out they were gluten free.&lt;br /&gt;&lt;br /&gt;If you are gluten free you need to try these at least once. If not you may want to try them anyway.&lt;br /&gt;&lt;br /&gt;I'm sorry I don't have a picture of the finished product. We ate them. They did not go without real home-cooked food.&lt;br /&gt;&lt;br /&gt;I have been struggling with some probable food reactions. I am still not sure what is causing the reactions but for now I have cut out gluten. It seems to be helping but not always so...&lt;br /&gt;&lt;br /&gt;Gluten is really hard to go without...&lt;br /&gt;&lt;br /&gt;I do have a wheat-free buddy. My youngest daughter is sensitive to both wheat and dairy. I collect cookbooks. I read my cookbooks just for fun. &lt;br /&gt;&lt;br /&gt;Last night I had that daily decision of what to make for dinner. I need to feed my family. I looked in my freezer, fridge and cupboards. I wanted to make something new. As I mentally inventoried what I had on hand I was also recalling some recipes...&lt;br /&gt;&lt;br /&gt;I had frozen pre-cooked hamburger and crescent rolls. I have the April 2008 Pillsbury magazine and remembered it was all about their crescents and biscuits. I pulled out the magazine and thumbed through. I decided to make the Taco Bake. &lt;br /&gt;&lt;br /&gt;Just one problem...I didn't have all of the ingredients on hand! Does that happen to you? It happens here often. So...I adapted the recipe to fit what I did have on hand. I was NOT going to the store. I repeat NOT going to the store.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I had the crescent rolls so that was easy. It just has you press the crescent roll dough into a pie pan. I used a deep dish pan so my filling would be beefy.&lt;br /&gt;&lt;br /&gt;I already had browned and seasoned ground beef in the freezer. The recipe only called for the ground beef. No onions or garlic in this recipe. Too bad! We like our onions and garlic so...plop goes the frozen beef into the deep skillet. &lt;br /&gt;&lt;br /&gt;The recipe called for a specific brand and style of chunky salsa. I only had thinner, less chunky, different brand. Tough - in it went. I did have to simmer longer to steam off the extra juices.&lt;br /&gt;&lt;br /&gt;I didn't have any taco seasoning mix. I don't usually buy the mix because it usually has MSG and I can't eat MSG. My meat was already seasoned with onion and garlic so I checked out my spices. I had several different kinds of chili powder/seasonings. I settled on the Cajun Chili because it smelled good to me at that moment.&lt;br /&gt;&lt;br /&gt;I didn't have cheddar cheese but did have Mexican mix cheese. So I topped it off with that.&lt;br /&gt;&lt;br /&gt;No lettuce or tomatoes in the house so we just did without. We did have corn with a little cream cheese melted into it for our vegetable. We will make up the greens tomorrow.&lt;br /&gt;&lt;br /&gt;The entire Bake was eaten by four people so fast I didn't get a picture for you. She seems to be wheat intolerant and lactose intolerant. The following recipe is gluten free but not dairy free. We had it for 12th night and it was declared a success by everyone!&lt;br /&gt;&lt;br /&gt;Apple-Pear Tart                &lt;br /&gt;&lt;br /&gt;9 gluten-free pecan shortbread cookies, crushed (1 1/3 cups)&lt;br /&gt;½ c. rice flour              &lt;br /&gt;¼ c. butter, melted&lt;br /&gt;1 8oz. pkg. cream cheese, softened&lt;br /&gt;1 egg&lt;br /&gt;¼ c. caramel ice cream topping&lt;br /&gt;2 med. Firm ripe pears, peeled, cored, and cut into 12 wedges each&lt;br /&gt;2 med. Apples, cored and cut in 12 wedges each (do not peel)&lt;br /&gt;2 T. butter&lt;br /&gt;1 T. lemon juice&lt;br /&gt;2 T. caramel ice cream topping&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 F. In bowl combine crushed shortbread cookies, flour, and the ¼ c. melted butter. Pat mixture into bottom and up sides of 14x5x1 inch rectangular or 10-inch round tart pan with removable bottom. Bake crust 10 minutes. Set aside.&lt;br /&gt;&lt;br /&gt;In med. Bowl beat cream cheese with electric mixer on medium to high speed for 30 seconds. Add egg and ¼ c. caramel ice cream topping; beat until smooth. Spread mixture in bottom of baked crust. Bake 10 min. more or until center appears set when pan is shaken. Cool on wire rack. Cover and chill at least 2 hours or up to 24 hours.&lt;br /&gt;&lt;br /&gt;In 12 inch skillet cook pears and apples in 2 T. butter over med. Heat 10 min. or until tender but still holding their shape, stirring occasionally. Add lemon juice and heat through. Spoon fruit mixture atop tart. I used Granny Smith.&lt;br /&gt;Don't worry about peels, just wash well. I just sliced with my apple slicer from Pampered Chef.&lt;br /&gt;Sprinkle with 1/4-1/2 cup raisins.&lt;br /&gt;Sprinkle cinnamon over all the ingredients.&lt;br /&gt;Place top crust. Cut some slits. Chunky applesauce dropped throughout the yams.&lt;br /&gt;Topping is a basic oatmeal, cinnamon, butter crumble.&lt;br /&gt;&lt;br /&gt;Yum, Yum, Yum&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Julie made a large turkey. It was the first time she used her oven in the new house. It was also a store turkey. However it was good meat. She also made some gravy and her absolutely scrumptious rich famous mashed potatoes. Oh she also whipped up stuffing/dressing.&lt;br /&gt;&lt;br /&gt;Others brought green bean casserole, crescent rolls, creamed pearl onions, fresh cranberry sauce.&lt;br /&gt;&lt;br /&gt;The dinner was a success. FLOAT: right; CLEAR: both" border="0" alt="" src="http://2.bp.blogspot.com/_leb_8ICcjHM/Sxa6p2bG24I/AAAAAAAADdY/nX4jk7-Ihbs/s400/P1011312.JPG" /&gt;What do you do with all the pumpkin seeds in the pumpkins?&lt;br /&gt;&lt;br /&gt;We roast them!&lt;br /&gt;&lt;br /&gt;Clean them off but you don't need to scrub.&lt;br /&gt;Spread them single layer in a cookie sheet.&lt;br /&gt;I used my stoneware bar pan.&lt;br /&gt;&lt;br /&gt;Sprinkle with a salty seasoning of your choice.&lt;br /&gt;&lt;br /&gt;Roast in oven at 400 until toasted.&lt;br /&gt;If you use a pan that is not stoneware you need to stir occasionally.&lt;br /&gt;&lt;br /&gt;Enjoy!&lt;div style='clear:both; I had some chicken tenders and some artichoke hearts that needed to  be used. I was going through some old magazines and found a recipe in the May 2009 Good Housekeeping for Chicken Saute with Artichokes, Lemon and Mint.&lt;br /&gt;&lt;br /&gt;It was perfect! I only needed a lemon, some mint and feta. Wow! Isn't it great when you can use leftover stuff and a new recipe at the same time. I wouldn't do that again. This was my very first custard so I was very glad they turned out so well. It came from an old church cookbook.&lt;br /&gt;Here is my variation of the recipe.&lt;br /&gt;&lt;br /&gt;bacon cooked to crisp&lt;br /&gt;handfuls of spinach&lt;br /&gt;sliced mushrooms&lt;br /&gt;shredded cheese&lt;br /&gt;&lt;br /&gt;put above ingredients into 2 deep pie shells, set oven to 350&lt;br /&gt;&lt;br /&gt;for each pie use a shaker or bullet type mixer&lt;br /&gt;1 c. milk&lt;br /&gt;3 eggs&lt;br /&gt;2T flour&lt;br /&gt;pour over filled pie shells&lt;br /&gt;&lt;br /&gt;then you bake them for 45 minutes or until a knife put between the center and edge comes out clean&lt;br /&gt;&lt;br /&gt;I have found that the meatier and cheesier you make these the more the men in the family like them. Jake doesn't care for the quiche egginess so load it up with the other stuff. You may have discovered that my cooking style is to use the cookbook as a guide not a rule.&lt;br /&gt;&lt;br /&gt;Both quiches were gone in a flash - no leftovers. My desktop computer is in the shop. They decided the motherboard was defective. I am posting from Chuck's netbook.&lt;br /&gt;&lt;br /&gt;Monday I was at the chiropractor's office and I saw a neat recipe. I thought that sounded a bit much but followed the recipe exactly. Four cloves went into the vinaigrette and 2 cloves grated and sprinkled on the greens. I personally LOVED IT! I got mixed reviews from the rest of the family. Most thought it was a bit too much garlic. I am making a double taco salad so I can leave some here for the hungry and take some for the ladies at my meeting. I have been making this taco salad since I was 17 years old. Pammy's mom taught me so even though I have tweaked it a bit I have named it in her honor. Pammy's firstborn called her Daupie and it stuck. Love you Daupie!&lt;br /&gt;&lt;br /&gt;Daupie's Taco Salad&lt;br /&gt;1 pound lean ground beef or turkey, browned&lt;br /&gt;add chili powders, onion and garlic to your taste (you can cheat with taco seasoning packet but be aware that many combo packet seasonings have msg so I don't ever use them)&lt;br /&gt;&lt;br /&gt;You may use fresh onion and garlic or whatever kind you have in your spice pantry both work.&lt;br /&gt;&lt;br /&gt;Lettuce - any kind you have or is on sale ( I don't use iceburg but that is a personal preference)&lt;br /&gt;&lt;br /&gt;1 or 2 cans of kidney beans, rinsed ( don't stress out if you don't have these but have another bean in your pantry, garbanzo and white beans also are good)&lt;br /&gt;&lt;br /&gt;shredded cheese&lt;br /&gt;&lt;br /&gt;some chopped green onion&lt;br /&gt;&lt;br /&gt;chopped tomatoes&lt;br /&gt;&lt;br /&gt;chopped or sliced jicama&lt;br /&gt;&lt;br /&gt;olives&lt;br /&gt;&lt;br /&gt;Toss all of the above ingredients and anything else you wish (I have added corn and a touch of cilantro if I have it on hand)&lt;br /&gt;&lt;br /&gt;I usually use an Italian dressing or Thousand Island to bring it together and then have sour cream on the side. It doesn't need a lot of dressing, just enough to clump it a little bit here and there. If I have a picky crowd I just leave it plain with an assortment of dressings on the side. Russian is also a good choice. I have also just picked something out that sounded good at the store, the El Torito green stuff is good too. I sent a daughter to store to pick up some chicken quarter legs. I then opened the cupboards and refridgerator and peered within.&lt;br /&gt;&lt;br /&gt;We are having lazy chicken and rice. Rice cooked in the rice cooker. Chicken baked in the oven basted with some vidalia onion italian dressing. See it's lazy and simple. I actually thought no...too many cooking blogs are out there. Yesterday I went to see Julie and Julia with my daughter Julie and I am going to just jump in with all the others. This blogging thing is really more about expressing myself and having a creative outlet than others reading it. So... what should I do? Where should I start? I own a LOT of cookbooks and I have used most of them. Hmmm&lt;br /&gt;&lt;br /&gt;I think I will start using each cookbook at least once. That will be quite a variety. I will probably still collect cookbooks so I will share from my new ones while making sure I use all the old ones too.&lt;br /&gt;&lt;br /&gt;I am looking forward to this cooking/baking experience.
